Veggie muffins

Makes 12 muffins


6 eggs

1 broccoli head (steamed & pureed)

1/2 cup coconut flour

1/2 cup bone broth or water

2 Tbsp olive oil

1/2 tsp baking soda


  1. Preheat oven to 180 degrees and line a 12 x muffin tray with baking paper

  2. Whisk eggs

  3. Combine coconut flour and baking soda in a separate bowl

  4. Add pureed broccoli, oil, eggs and water/bone broth and mix well

  5. Add dry ingredients to wet ingredients and combine

  6. Spoon mixture into prepared muffin tray

  7. Bake for 15-20 minutes until golden

  8. Eat with lots of butter

Note: you can use this recipe as a base and then add any other ingredients you like! I added roasted sweet potato, feta and sprinkled pumpkin seeds on top before baking.
