This granola is full or healthy fats, protein and very low in sugar (the opposite to most breakfast cereals!). It also clusters which is almost unheard of in a healthy granola.
Ingredients
4 cups flaked coconut
1 cup slivered almonds
1/2 cup pumpkin seeds
1/2 cup your choice of nut (I used a combo of pecan & macadamia)
2 Tbsp chia seeds
1 tsp cinnamon
Pinch of salt
1 Tbsp maple syrup
1 Tbsp coconut oil or olive oil
1 egg, beaten
Method
Preheat oven to 160 (fan-forced)
Add all ingredients excluding oil, egg and maple syrup to a large bowl and mix well
Add oil and maple syrup and toss to coat
Add beaten egg and mix well (the egg is what makes it cluster!)
Spread mixture thinly across 2 baking trays and bake for 10 minutes or until golden
Enjoy with yoghurt and berries
Store in an airtight container in the fridge.
