Protein banana pancakes

The problem with most pancake recipes is that they don't have enough protein in them to make for a satiating breakfast and you end up feeling hungry again an hour later. With the inclusion of 2 eggs and 1 scoop of protein this gives you a whopping 27g of protein. I love the ATP science NoWay protein because it is made from collagen and is great for your gut and skin and very well-tolerated by most.




Ingredients

2 eggs

1 scoop ATP Science NoWay banana protein

Tbsp almond meal

1/4 tsp cinnamon

1/8 tsp baking powder

Butter or ghee for frying


Toppings: Greek yoghurt, peanut butter, frozen blueberries and pepitas


Method

  1. Add eggs, protein, almond meal, cinnamon and baking powder to a blender and blend on high until mixed well

  2. Add the butter or ghee to the pan and pour out some of the pancake batter

  3. Cook on one side until bubbles appear and then flip until cooked to your liking

  4. Repeat step 2 and 3 for the remaining batter

  5. Top with your favourite pancake toppings and enjoy!
